Cole slaw with apples good for spring picnics

If you're thinking of a salad to make to go along with a spring picnic, try a creamy cole slaw. Instead of the traditional slaw with only cabbage and carrots , this one is full of color, with bright red chunks of apples, juicy raisins and chopped walnuts.

Preparing the salad is easy if you have a blender or food processor to shred the vegetables, and the salad tastes better if it is made well ahead of serving time to allow the flavors to blend.

If you don't have any apples on hand, slices of fresh orange or pineapple would be a good substitute.

For a delicious picnic, pack some cold baked chicken along with the cole slaw and fresh strawberries and rich, fudgy brownies for dessert. Apple Sour Cream Slaw 1 cup sour cream 2 tablespoons lemon juice 2 tablespoons cider vinegar 2 tablespoons sugar 1 teaspoon salt 1/4 teaspoon coarsely ground black pepper 1 teaspoon dry mustard 1 cup sliced celery 2 cups shredded cabbage 1 cup shredded carrots 2 large red apples 1/3 cup raisins 1/3 cup chopped walnuts

Combine first 7 ingredients.Beat until smooth. Combine remaining ingredients. Add to first mixture, toss to mix. Chill in refrigerator for a few hours before serving. Makes 8 servings.
