Carrots

Smaller carrots are more tender, milder in flavor and brighter in external color than large ones. These smaller carrots are especially good for carrot sticks and appetizers, while the larger carrots are good for cooking and shredding.

When serving raw carrot add a teaspoon of lemon juice to enliven the flavor. When cooking, take care not to overcook this vegetable because flavor will be lost.

Fresh carrots will stay remarkably well in the refrigerator inside a plastic bag for several weeks. Before storing carrots, remove tops to keep them from absorbing all of the vegetable's moisture.
