Spanish cooking classes offered in Madrid

After a successful first year of offering Spanish cooking classes for Americans, Alambique Cooking School in Madrid has announced its winter schedule and its list of dates for next year's classes. The week-long program in the cooking school includes classes, luncheons, deluxe accomo-dations at the 5-star Palace Hotel, and a schedule of individualized sightseeing and events for students and traveling companions.

The remaining date for this year is Dec. 4. The dates for 1983 are Jan. 15, Feb. 12, March 5, April 9, May 7, June 4, Oct. 15, Nov. 1, and Dec. 3.

Some of the dishes prepared in the classes are cold almond and garlic soup, garnished with green grapes and croutons; clams with garlic and bread crumbs; a casserole of fava beans with sausages and hams; and such mouthwatering desserts as custard fritters and an almond tart made solely of ground almonds, eggs, sugar, and lemon rind.

The program - including hotel, transfers, breakfast, luncheons, and guided tours - costs $950 plus air fare. For traveling companions not taking the course , the cost is $675. For reservations and information write to Marketing Ahead Inc., 515 Madison Avenue, New York, N.Y. 10022.
