Two refreshing desserts in grape combinations

Fresh grapes, especially the seedless varieties, are a quick refresher during the late summer months and a versatile ingredient in deserts. An unusual dessert that my family has always enjoyed is made of grapes, sour cream, and brown sugar. It requires overnight refrigeration, so it needs to be made a day ahead.

Grapes and Sour Cream 2 pints sour cream 2 to 3 pounds green seedless grapes, washed 2 to 3 cups brown sugar

Mix grapes and sour cream in 2 1/2 quart souffle dish. Press enough brown sugar on top of the mixture to form a 1/2 inch crust. Refrigerate overnight.

About 2 hours before serving, place chilled dessert under broiler. Heat until brown sugar is warm and bubbley. Watch closely so sugar doesn't burn.

Put dessert back in refrigerator to chill until crust is hard. Serves 12-16.

Here is another easy-to-make but delicious dessert using grapes as the main ingredient.

Grape Ambrosia 1 3 ounce package strawberry gelatin 2 cups boiling water 1 cup sour cream 1 cup miniature marshmallows 1 11-ounce can mandarin oranges, drained 2 cups California grapes, halved and seeded 1/4 cup coarsely chopped walnuts 3 1/2 ounces toasted coconut

Dissolve gelatin in boiling water, pour into 8-inch cake pan and chill until firm. Meanwhile, mix together remaining ingredients, except coconut.

Cut gelatin into cubes and fold into mixture. Refrigerate until serving time, at least 1 hour.

Garnish with coconut. Serves 6.
