If cooking a whole ham sounds like more work than you want to take on -- or if you only need enough to feed a small group of people -- try these simple recipes using ham slices, available in supermarket meat departments. Glazed Ham Slice 1/4 cup currant jelly 1 1-pound ham slice 1 1-pound can pineapple slices (optional)
Spread 2 tablespoons jelly on one side of ham. Broil 8 inches from heat 10 minutes. Turn. Spread other side with remaining jelly. Arrange pineapple rings on broiler pan. Broil 5 minutes. Turn pineapple and brush with additional currant jelly or syrup from pineapple. Broil 5 minutes longer. Serves 4 to 6. Curried Ham Steaks 2 ham steaks, 1/4 to 1/2 inch thick 1/4 cup butter or margarine 1/4 cup brown sugar 1 tablespoon curry powder 1/4 cup raisins 1 1-pound can pineapple slices, drained 1 1-pound can apricot halves, drained 1 1-pound can pear halves, drained
Melt together butter and brown sugar. Stir in curry powder. Place ham steaks in a large shallow baking dish. Top with fruit. Pour brown sugar sauce over all and bake for 30 minutes in a 350-degree F. oven, or until ham sizzles. Serves 4. Southern Skillet Ham Slice 1 1-pound center-cut ham slice with fat 1/2 to 3/4 inch thick 1 teaspoon brown sugar 2 teaspoons prepared mustard 3 teaspoons flour 1 teaspoon vinegar 1 cup milk
Cut some fat from the ham and dice it. Slash edges of ham in several places. Mix together the brown sugar, mustard, flour, and vinegar to form a smooth paste.
Preheat skillet to 350 degrees F. Add diced ham fat and cook, stirring now and then until bottom of skillet is shiny with rendered fat. Remove diced fat.
Add ham slice to skillet and fry 2 or 3 minutes on each side. Then spread with brown sugar paste. Pour milk around ham. Cover skillet and cook for 45 minutes to 1 hour, or until ham is very tender. Serves 4. Gingered Ham Slice for Two 1 fully cooked center cut ham slice, 1 inch thick 1/2 cup ginger ale 1/2 cup orange juice 1/4 cup brown sugar 1 tablespoon salad oil 1 1/2 teaspoons wine vinegar 1 teaspoon dry mustard 1/4 teaspoon ground ginger 1/8 teaspoon ground cloves
Slash fat edge of ham. Combine remaining ingredients. Pour over ham in shallow dish. Refrigerate overnight or let stand at room temperature 2 hours, spooning marinade over ham several times. Heat in a 350-degree F. oven about 30 minutes, brushing frequently with marinade. To serve, spoon remaining marinade over ham. Serves 4 to 5.
