At Charlie Trotter's, customers choose from several tasting, or `degustation,' menus. Here's an example of one night's `Grand Menu Degustation' (price: $75):

First Course: Diver Scallop Strewn Horseradish Potatoes with Mustard Oil, Red Bell Pepper Juice & Herb Coulis, or

Terrine of Foie Gras, Artichokes & Roasted Portabellas with Artichoke Napoleon & Sweet Corn Coulis

Second: Geoduck Clam & Salmon Tartare with Cucumber Coulis, Marinated Seaweed & Soy-Wasabe Sauce, or

Rabbit Loin & Braised Turnip Lasagna with Peas & Truffled Yellow Tomato Juice

Third: Peeky Toe Crab Cake with Chanterelle Mushrooms, Water Chestnuts, Apples & Curried Carrot Broth, or

Belgian Endive, Mesclun, Hazelnuts, Goat Cheese, Elephant Heart Plums & Kiln-Dried Cherries
