Pomme du Berry

When preparing to make these juices, gather the freshest and ripest fruits and vegetables you can find. `If you put in underripe, flavorless fruit, you're going to make flavorless juice,' writes author Carol Gelles. For each of her recipes below, unless specified, place ingredients in a juice extractor in the order listed. Pomme du Berry 1 cup blueberries (6 ounces) 1/2 cup raspberries (3 ounces) 1/2 mediumm Golden Delicious apple (3 ounces), cored

Makes 1cup. Mango Tango 1/2 mango (3 ounces), peeled and pitted 2 medium apricots (1-1/2 ounces each) 1 large carrot (6 ounces), top trimmed

Makes 2/3 cup. Tomato-Celery Zinger 1 large outer celery rib (3 ounces), trimmed 1 fresh jalapeno pepper, seeded 1 medium tomato (8 ounces)

Makes 3/4 cup. Blackberry-Celery Quencher 1/3 cup (2 ounces) blackberries 1/2 medium apple (3 ounces), cored 2 medium celery ribs (4 ounces), trimmed

Makes 2/3 cup. Herbed Cucumber Juice 1 medium cucumber (7 ounces), peeled if waxed 10 sprigs fresh dill (1/2 ounce), roots removed 8 sprigs parsley (1/2 ounce), including stems

Juice half the cucumber, add dill and parsley, then juice remaining cucumber. Makes 3/4 cup. Banana-Apricot-Orange Squeeze 1/2 medium banana (2 ounces), peeled 1 large apricot (2 ounces), pitted 1 medium juice orange (5 ounces), peeled and seeded

Makes 3/4 cup.
