FRUITY GRANOLA

FRUITY GRANOLA

Store-bought granola can't compete with this tasty homemade version. On special days, toss in other fixings, such as chocolate chips or chocolate-covered peanuts.

4 cups rolled oats

1 cup toasted wheat germ

1 cup sliced almonds, or a combination of chopped nuts

1/4 cup canola oil

3/4 cup honey

1 teaspoon vanilla

1 teaspoon cinnamon

2 cups dried fruit bits - raisins, pineapple, papaya

Preheat oven to 325 degrees F.

In a large bowl, mix oats, wheat germ, nuts.

Stir in oil, honey, vanilla. Sprinkle in cinnamon. Mix well.

Spread mixture in baking pan and cook for about 30 minutes, stirring the granola occasionally so it browns evenly.

After granola cools, mix in dried fruit and/or other fixings.

Makes about 8 cups.
