Spice cookies filled with nuts and raisins
There's something about fall that makes a good cook think of sugar and spice, cakes, pies, and cookies and good things from the oven that have been missed during the summer months.
This doesn't mean that cookies aren't good all year around. These are full of delicious spices but also have a tangy, orange- lemon flavor and lots of raisins and nuts as well. Mrs. Miller's Spice Cookies 3/4 cup butter 1 scant cup brown sugar scant cup white sugar 2 eggs 1 cup raisins 1 cup chopped nuts 1 teaspoon soda 1 teaspoon baking powder 1/2 teaspoon salt 1 teaspoon cinnamon 1/2 teaspoon cloves 1/2 teaspoon nutmeg 1 teaspoon lemon extract 1 orange, grated rind and juice 3 or 4 cups flour
Cream butter with sugar, adding sugar gradually. Add eggs one at a time, beating after each one. Combine spices, baking powder, soda, and salt with 3 cups of flour and sift several times.
Add alternately to first mixture with orange juice, ring, and lemon extract that have been combined. Add as much flour from fourth cup to make medium dough , not too stiff. Fold in nuts and raisins.
Drop by teaspoonfuls on buttered cookie sheets. Bake at 375 degrees F. and wathc that they get golden brown but don't burn.
