No bake cookies for summertime

For cooks in an already warm summer kitchen, no bake cookies are a welcome treat. This recipe uses a minimum of heat under a saucepan, then into the refrigerator they go.

The ingredients - economical margarine, quick-cooking oats, flaked coconut, chopped walnuts, and cocoa - are combined together, cooked briefly, then dropped by teasponfuls onto waxed paper. The result is a chewy, delicious cookie. No Bake Chocolate Cookies 11/2 cups quick-cooking oats 1/2 cup flaked coconut 1/4 cup chopped walnuts 3/4 cup sugar 1/4 cup milk 1/4 cup margarine 3 tablespoons unsweetened cocoa Flaked coconut, if desired

In small bowl, combine oats, 1/2 cup coconut and walnuts; set aside. In 2 -quart saucepan combine sugar, milk, margarine, and cocoa. Cook over medium heat , stirring occasionally, until mixture comes to a full boil, 3 to 4 minutes. Remove from heat.

Stir in oats, coconut, and walnut mixture. Quickly drop mixture by rounded teaspoonfuls onto wax paper. Cool completely. Store in refrigerator. If desired, while cookies are warm, roll in additional coconut. Makes 2 dozen.
