Freezing berries

When native strawberries are in season the price is often low and if you enjoy picking them at a local farm you will find it most satisfying to freeze some to enjoy later.

Strawberries freeze better when slightly sweetened. To freeze berries in a sugar pack, sprinkle each quart (about 1 1/3 pounds) strawberries with 3/4 cup sugar and mix thoroughly until a juice forms. Pack in container with 1/2 inch head space, seal and freeze.
