THE arrival of Europeans greatly assisted the development of the chile-dominated cuisines of the New World. It is difficult to imagine the cuisines of the Americas today without the foods introduced by the Spanish, Portuguese, and Africans .... In many cases - especially with the grains, meats, vegetables, and spices - they were combined with chile peppers for the first time in history.
