2 tablespoons vegetable oil
1 medium onion, chopped
1 green bell pepper, cored and diced
1 cup long-grain white rice
2 cups finely chopped tomatoes
1/2 cup water
3/4 teaspoon salt
Freshly ground black pepper, to taste
1/2 to 1 teaspoon hot pepper sauce
5 strips of bacon, crisply fried
Preheat oven to 350 degrees F. Oil or butter a 2-quart ovenproof baking dish.
Heat oil in medium-sized frying pan. Add onion and bell pepper; saute 4 to 5 minutes. Remove pan from heat.
Stir in rice and remaining ingredients. Spoon rice mixture into baking dish.
Cover dish, or seal tightly with aluminum foil. Bake 45 minutes, or until rice is tender, stirring 2 or 3 times during baking, adding a little more water if rice becomes dry.
